Talking with Bumble (my favorite mother in law) yesterday about what we should have for dinner, she suggested soup since the temperatures had dropped. I immediately knew what I’d make- sausage kale soup. We made this during our first month of Once a Month Meals and it was a big hit! I basically quadrupled this recipe and made plenty of leftovers. Cold weather or not, this creamy soup rocks!
Sausage Kale Soup
2 Tbsp Coconut oil
2 Carrots, peeled and chopped
2 Celery stalks, chopped
1 Red onion, diced
4 Garlic cloves, diced
4 Cups Chicken broth
1 Tbsp Italian seasoning
1/2 Tsp Salt
1/2 Tsp Pepper
14 oz Coconut milk
1 cup Kale, chopped
1 pound Sausage, browned
Directions:
In a large stock pot over medium heat, melt coconut oil. Add carrots, celery, and red onion. Saute until onions are translucent. Add garlic and continue to saute an additional minute. Add chicken stock, Italian seasoning, sea salt, pepper and coconut milk to the stock pot. Increase to medium high heat until it begins to simmer. Lower to medium and stir in kale and sausage. Cover and simmer for 20 minutes.
